three) Narezushi: It’s a traditional form of fermented sushi serving set. This type of Sushi is prepared with skinned fish stuffed with salt, and saved in a wooden barrel, soaked with salt again. This is to be kept for days. As and when days pass, water slowly gets drained out and finally removed. This may be eaten after six months. It remains edible for additional six months.

four) Oshizushi: This is often known as pressed Sushi and it’s a speciality of Osaka. The bottom of oshibako is lined with toppings and then covered with sushi rice after which the lid of the mould is pressed firmly to create a compact. This block is removed after which it is cut into chew sized pieces.
